caveOur wines are made with a strong focus on natural development. Growing organic grapes achieves an ideal balance of sugar / acid and safeguards the natural yeasts. The grapes are harvested at maturity, which also helps to avoid the need for additives.

After fermentation, the wine is aged on its lees, much of it in century-old wooden vats that allows the wines to flourish.  Sulfur is used only very sparingly.

When the wines have reached a good stage of development and maintain a nice stability, they are bottled and stored until sold.
